When I'm trying to capture a thrall clearly stronger than myself, I put a truncheon in my current thrall hands and he pulls it out, cool. Then he just chases the NPC around with it and never swings. Not cool., Putting a captured thrall in the wheel of pain then transferring the thrall to the sacrificial stone isn't possible unfortunately. You can however have as many stones as you want, so you can grab thralls and drag them to the various stones.
